Effect of frozen fish,turkey and chicken consumption in west africa

It is all known that about 7 0% of all consumed frozen fish,turkey,chicken in west africa ecially nigeria are imported. Those frozen foods take about a month to get to the consumer which has effect om human body. During the transportation period of the frozen food,they acquire lipid peroxidation which leads to quality deterioration,rancidity and accumulation of potential toxic compounds in food e.g malondialdehyde (MDA) content. For you to get a toxic free frozen food, it must not be up to 1 to 2 days of refrigeration for fresh fish and turkey, 3 to 5 days for chicken(source:USDA 2005). That means that the MDA detected is due to long cold storage i.e it increase the level of lipid peroxidation and thiobarbituric acid - reactive substance ind food.WHAT ARE THE RISKS: The major risk in the ingestion of foods cnntaining lipid peroxidation products increase risks of cancer and cardiovascular diseases (Esterbauer, 1993). This is a major problem in west africa
and what we should do is just make fresh fish,turkey and chicken available for us to eat because it has no trace of malondialdehyde contents

How to Prevent Lassa fever

Haye you ever think or thought that what you eat is very important in your life,it could cause havoc to your body or damage the body cells. LASSA FEVER is one of the disease that could cause havoc to our body due to what we eat. Currently at the time this article was posted,lassa fever was discovered in 12 states in nigeria,west africa with cases up to 37 and some had died throug it. WHAT IS LASSA FEVER? It is an acute viral hemorrhagic fever caured by lassa virus and it is associated with persistent high fever. The first case was discovered in nigeria in the year 1969 when two missionary nurses died due to the fever and later discovered in the west african countries e.g sierra leone, benin, ivory coast,togo etc.. LASSA FEVER is spread due to exposure i.e having contact with the victim. It is also spread by eating foods contaminated with rat droppinps (the rat specie: M.natalensis,majorly found in west africa) and urine. Unfortunately, it enters human
body through blood stream, lymph vessels, respiratory tract and digestive tract. HOW DO YOU KNOW A LASSA FEVER VICTIM? The first symptom is gradual onset of fever and malaise, increase fever(it last for 2 to 3 weeks) and myalgia with severe prostration. Victims of lassa fever also have pains behind the sternum and also they have cough. Some other symptops include: abdominal pain, nausea,vomiting, diarrhea, conjuctivities, pharyngitis, bleeding from gums..PREVENTION: first of all,we must make sure that foods and water are covered properly to prevent the rat from eathng the food. Cook food thoroughly wiile rat holes and hideouts must be blocked. Dnt forget to store grains and other dried foo items in containers with coverg we shnuld dispose our refuse and keep pets like cats in the house

How to prevent salmonella infection

Salmonella disease is found in egg,tomatoes,seafood,diary products,milk,poultry,meat e.t.c which can cause other disease and may leads to death. It was first found in tomatoes(red round tomatoes and red roma) and later found in other foods like meat,egg,fruits,vegetables,seafood,milk,poultry,diary products,ice cream, cookie dough. It can cause diarrhoea(which may be bloody),fever,nausea,vomiting and abdominal pain. Serious and potentially fatal caser are more likely in young children,frail or elderly people and people with weak immune systems. Salmonella bacteria linked to human and animal faeces can contaminate water,soil and the surface of tomatoes. Bacterial contamination could occur anywhere along the food chain, from growing fields with inadequate sanitary facilities or dirty irrigation water restaurant cutting board.
